Made by Brad and Beth Cunningham at their dairy in Caernarfon from raw goat's milk, in the tradition of a French Crottin. Aged for several weeks until it develops a wrinkled, mould-ripened rind and a soft, yielding paste beneath. Creamy and savoury with a gentle goaty tang and a mushroomy depth from the rind — bigger and more rustic than most Welsh goat's cheeses, with a bit of attitude to it.
Yr Afr means "the goat" in Welsh. Brad and Beth started out making cheese at home with a small herd before relocating to Snowdonia, where they now work with local goat herds and make the cheese by hand. A firm favourite at &CAWS!
